Review: Balancing In Heels Book

I have been really looking forward to reading Kristin Cavalari's book Balancing In Heels. I preordered it off of Amazon so it was on my doorstep the day it was released. I admire how focused she is on eating healthy and making sure her family, little ones included, are eating real food instead of the processed crap out there. I admit that I don’t eat anywhere near as clean as Kristin does, but it gives me something to strive for! 

I very much enjoyed reading her book. It was very well done and definitely left me wanting more. She offered up some great information to be aware of when ready nutrition labels. I appreciated her showing us what face products she actually uses in her daily routine.  But most of all I absolutely loved the recipes she shared. I can’t wait to try them! My only hesitation for some of the recipes is that I like to find recipes that call for less ingredients so I’m not buying something that will only be used once in one recipe and then it spoils. This problem has to do more with my skill and creativeness in the kitchen but I’m learning. 

Tonight I made her Almond Butter Sugar Cookies…but turned them into Peanut Butter Sugar Cookies. I only had peanut butter in the house because, well, I don’t like almond butter as much personally. I also made my own oat flour! Who knew that was so darn easy! I told some rolled oats and put them in the food processor for about 30 seconds. You never know how someone else’s recipe when turn out when you actually try to make them but these were beyond delicious!!! My husband even approved and scarfed down about 6 of them! These are definitely going to be a new staple in our house! Below is the recipe that I used based off of the one in the book.

You won’t regret checking out this book. I enjoyed it for the several tips and recipes alone!



Peanut Butter Sugar Cookies 

1 stick unsalted butter, softened
1 cup coconut sugar
1/2 cup peanut butter
1 large egg
1 1/2 cups of oat flour (use 1 1/2 cup of rolled oats if making own in food processor)
3/4 teaspoon baking soda
1/2 teaspoon pink Himalayan salt

Mix together the first 3 ingredients, then combine in egg. Next add the last three ingredients to the wet ingredients. Place tablespoon sized balls onto a parchment lined baking sheet. They do spread so don’t place them too close together. Cook for 10 minutes at 350 degrees. Mine were ready at exactly 10 minutes!
